We left Niagara on the Lake with a basket full of peaches. They were fuzzy, bright, and were about 3 days away from ripe + sweet; 3 days too long to wait.
Determined, I knew my go-to summer salad would benefit from the crunch + tartness of the not-yet-ripe peaches. On a hot summer day, when Mike has me in charge of salad for any meal, I whip out the delicious and incredibly easy to make watermelon + feta salad. This time, I added peaches!
W A T E R M E L O N + P E A C H S A L A D
1 small watermelon
1 [not-so-ripe] peach
a few leaves of fresh basil
1/3 cup of feta cheese
2-3 tbsp balsamic vinegar [add as little or as much as you like]
1-2 tbsp olive oil [add as little or as much as you like]
salt + pepper to taste
cut watermelon + peach into about 1/2″ cubes | combine in a bowl
rip basil leaves into smaller pieces | add to watermelon + peach mix
crumble feta cheese over the fruit | toss to mix ingredients
drizzle balsamic vinegar + olive oil over top of mix
season with salt + pepper to taste
toss to combine
With fresh ingredients, a watermelon salad is the most refreshing and satisfying side to accompany anything and everything off the bbq.
